These pancakes are so wonderful that we have made them three times...this week. The recipe can be found in Lauren Ulm's wonderful cookbook, Vegan Yum Yum.
Tonight's meal also featured the debut of Ulm's lime peanut noodles w/ seitan, kale, & carrots.
The secret to this dish was the fresh rice noodles from the Asian market (as suggested by Ulm). They are leagues better than the dried ones. This was super easy and wonderfully peanutty.
Total prep time for the noodles and pancakes was <30 min.
